8. Curried Chickpea Wrap
Ingredients:
1 can chickpeas, drained and rinsed
2 tbsp curry powder
1 tbsp olive oil
1/2 cup yogurt
1/2 cucumber, diced
Fresh cilantro, chopped
Salt and pepper
Tortillas
Instructions:
Heat the olive oil in a pan, add the chickpeas and curry powder, and cook for 5 minutes.
Remove from heat and let cool slightly, then mix with the yogurt and cucumber. Season with salt and pepper.
Place the mixture on tortillas, sprinkle with cilantro, and wrap tightly.
Serve cold or slightly warmed.
