4. Easy Lentil Soup
Ingredients:
1 cup lentils
1 onion, diced
2 carrots, diced
2 stalks celery, diced
2 cloves garlic, minced
1 tsp thyme
1 bay leaf
4 cups vegetable broth
Salt and pepper
Olive oil
Instructions:
In a large pot, heat olive oil over medium heat. Add the onion, carrots, celery, and garlic, cooking until softened.
Add the lentils, thyme, bay leaf, and vegetable broth. Season with salt and pepper.
Bring to a boil, then reduce heat and simmer for about 30 minutes, until lentils are tender.
Remove the bay leaf before serving. Optional: blend part of the soup for a creamier texture.
